HAZARD ANALYSIS AND CRITICAL CONTROL POINTS (HACCP)
Hazard Analysis Critical Control Points (HACCP), on food safety and quality, is a structured and disciplined approach to the identification of points of hazard to products. It provides a framework for monitoring and controlling the points in the supply line or process where the product is at risk of becoming unsafe to consume or use. The focus is upon product safety and wholesomeness. HACCP is a system, which identifies specific hazard(s) and identify the preventive measures for their control. The system consists of seven principles.
